Gem Lettuce and Burnt Honey Vinaigrette Salad
YIELD: 4-6 servings
INGREDIENTS
Burnt Honey Vinaigrette - Burnt Honey Vinaigrette
1/2 cup - Wildflower honey
1/2 cup - Grapefruit juice, fresh
1/2 cup - Olive Oil
Salt, Kosher, as needed
1 lb. - Gem Lettuce, washed
4 - Radish, thinly sliced
1 bunch - Chives, match stick cut
3 sprigs - Parsley, Italian Flat, washed, picked leaves
Black pepper, as needed
DIRECTIONS
Burnt Honey Vinaigrette
1) In a sauce pot over high heat add honey.
2) Cook the honey until it gets a dark amber color. There will be a slight burnt smell to it.
3) Remove from heat and carefully whisk in the grapefruit juice. Be sure to pour the grapefruit juice in slowly.
4) Let stand to cool.
5) One cool, whisk in the olive oil and season with salt. Reserve for assembly.
Assembly
1) In a large mixing bowl, combine all the ingredients.
2) Serve immediately.
