Orange Pomegranate Mocktail with Rosemary-Infused Honey

YIELD: Makes 1 mocktail

INGREDIENTS

For Rosemary-Infused Honey:

1 cup - honey

2 T - water

4 - rosemary sprigs

For Mocktail:

1/4 cup - fresh orange juice

1/4 cup - pomegranate juice

1 T - rosemary-infused honey (recipe below)

1/2 cup - sparkling water or club soda

fresh rosemary sprig and pomegranate arils, for garnish

ice cubes

DIRECTIONS

For Rosemary-Infused Honey:

Bring honey, water, and rosemary to a simmer in a small saucepan. Cook for 5 minutes. Remove from heat, and let steep until cool. Remove rosemary sprigs, or leave in for a stronger flavor.

For Mocktail:

In a shaker, combine the orange juice, pomegranate juice, and 1 tablespoon of the rosemary-infused honey. Shake well to mix.

Fill a glass with ice cubes and pour the juice mixture over the ice.

Top with sparkling water or club soda and stir gently.

Garnish with a sprig of fresh rosemary and a few pomegranate arils.

Serve immediately and enjoy!
