Palanquetas de Cacahuate

YIELD: Makes 12 pieces

INGREDIENTS

1/4 cup - honey

1 pinch - sea salt

1 T - butter, unsalted

2 tsp. - water

1 tsp. - vanilla extract

1 cup - peanuts, unsalted, roasted, shelled

1/4 cup - pumpkin seeds, toasted

1 T - Sesame seeds, toasted

1 cup - sugar

DIRECTIONS

Place the honey, salt, butter, sugar and water in a small sauce pot and bring to a boil.

Add the peanuts, pumpkin seeds and the sesame seeds.

Cook over a medium heat until the honey syrup becomes medium amber brown. Add the vanilla extract and mix well.

Pour the mixture into a lightly greased 12-cup cupcake pan for 12 individual portions and let the palanquetas come to room temperature. You can also place the mixture onto a 10" x 15" cookie sheet, let the palanqueta come to room temperature and then cut into 12 pieces.
